The fundamentals of diffusion of small molecules in polymer can find application in other fields. In this chapter a model for the diffusion of hazelnut oil in chocolate has been developed and a numerical solution obtained. This model includes diffusion in a heterogeneous media, coupling of molecular diffusion and phase behavior, and a moving boundary condition. |
